Welcome to Pizza Republica!

The word “republic” is derived from the Latin phrase res publica, which can be translated as “a public affair”. In our eyes it helps define our hospitality and passionate culinary style. Quite simply, we don’t cook for us or our ego, we cook for and serve you. We strive to bring the rustic ambiance and fresh ingredient farm to table philosophy found throughout Italy, home to Colorado. We use the finest imported ingredients and century old artisan traditions to bring the definitive Neapolitan pizza experience to our guests.

Authentic Neapolitan pizzas must be made with certain ingredients, like San Marzano tomatoes, which grow on the volcanic plains to the south of Mount Vesuvius, and Fior di Latte (Fresh Mozzarella from cow’s milk). Last year we made over 50,000 pounds of Fresh Mozzarella. According to the rules proposed by the Associazione Verace Pizza Napoletana, genuine Neapolitan pizza dough consists of Caputo 00 flour, fresh yeast, sea salt and water; nothing else. The dough must be kneaded by hand or with a lowspeed mixer and, after the rising process, the dough must be formed by hand to achieve a thin crust and a soft chewy cornicione. The pizza must be baked for 90 seconds in a 1000 °F wood fired oven. When cooked, it should be crispy, tender and fragrant.

About Our Food

The delicious Neapolitan-style pizzas at Pizza Republica are cooked in a wood fired brick oven at over 1000° that crisps the crust with a charbroiled smoky flavor and perfectly melts the handmade mozzarella. Heating the oven to 1000° allows the aromas of our fresh ingredients to shine through before they become overcooked. This is the true art of the Pizzaiolo: each pizza is an individual piece of art for you to enjoy.

In addition to pizza, we offer organic salads and rustic Italian entrees that are sure to delight even the most discerning foodie’s palate. You’ll savor our Heirloom Tomatoe Garganelli, Wood-Fired Flatbreads, and don’t forget Nona’s Famous Stuffed Shells. Save room for dessert, which just got better with the addition of Chocolate Nutella Ravioli, Limoncello Cheesecake and Flourless Chocolate Torte. Add a great glass of Port or Amaro and you have the perfect finish to a great evening.
